Previously left 5-star reviews but downgrading to 4-star unfortunately. Been coming here for at least 5 years, but over the past 2 or so the quality is too inconsistent. The quality seems to be dependent on staff working that day. When the main older guy (Cato?) is working the quality is great. However, when he is not there the al pastor is too fatty (huge fat chunks), cut into huge chewy chunks (usually strung together), and not properly seared off (just seems to be tossed on the flat top to get warm but not actually seared like it's suppose to be). Additionally when this happens usually ingredients are sometimes missing (e.g. sour cream and cheese on the taco plate; or no salsa at all in the bag). I now look inside to see who is working. If the main guy isn't working that day I take my business elsewhere unfortunately. (I'm just speculating on the cause of the inconsistency, but it definitely seems to be tied to staff.)

I've eaten at this taco truck multiple times and my favorite are the Cato's burrito and carne asada quesadilla. The meat is always flavorful and juicy, the tortilla is crispy, and the complementing ingredients are prepared really well. My only wish is for a spicier salsa. I've tried the pastor tacos as well but they're okay, I think the sauces make the taco and their red/green sauce don't really add much flavor.

Pretty solid taco truck where you can get high quality food for low prices. I had the catos burrito, which was so spicy that I had to drink a ton of water and get frozen yogurt after. I would say my spice tolerance is pretty good, too. One downside is that there is no bathroom nearby. There is one standalone sink, but no soap or hand sanitizer.

Vegan/veg reviewer: Absolutely amazing! This is a must try food truck- quick service, tasty and fresh. We've tried both the vegetarian options - veggie burrito with everything and veggie Quesadillas. We really like how the food isn't greasy at all (of course the Quesadillas contains more cream and cheese). It's full of stuffings and unlike other places it has a pretty thin layer of the white flour roll- so yea it's so worth it. Very filling and also affordable. They have a good number of parking spots available around the truck so yeah you can easily park there. They have a shaded seating area as well - so it's fine if you wanna eat out there as well. It's an open area - this place might become more happening in the coming months with more lights and other food trucks coming back into action.
